Rainy Day Roast Chicken Goodness

I don't know why but on cloudy, rainy days I crave comfort foods like lasagna, pot roast, or roast chicken for dinner. Roasting a chicken is pretty easy to do and throwing everything in one pan or pot makes it even simpler. This version includes roasted garden veggies and an extra little kick from kalamata olives (you could use green olives as well).

Recipe
1 whole chicken
2 tbsp butter, slightly softened
3 tsp of Herbes de Provence (I use PC brand from Superstore here in Canada)
1/2 tsp of sea salt
1/8 tsp of ground pepper
Garden veggies of your choice
Small potatoes, cut in half
1/4 cup of chopped olives
375 degree oven

Step 1: prep your chicken by giving it a good rinse (inside and out) in cold water, then pat dry with a paper towel.

Step 2: using a spoon, loosen the skin carefully on the breast of the chicken, to create an open pocket area. Go slowly so you don't tear the skin.


Step 3: prepare herb butter mixture by mixing the butter with the herbs, salt and pepper.  Mix it really well.

Then-- this is the fun part-- use your spoon to push the butter mixture under the skin. You may need to use your hands to get it released under the skin, then massage the chicken breasts to spread out the butter.  It should move freely.  With the remaining mixture, spread it out on top of the chicken.

Step 4: Cover it in foil and put it in the oven. Cook for 45 minutes.

Step 5: Remove from oven and baste the chicken with the juices that have been releasing from it as it cooks.  Then put it back in the oven for another 15 minutes, covered with foil.
Step 6: Remove from oven, add veggies around the chicken. Put back in oven, uncovered, and bake for another 20 minutes.  Remove from oven, baste everything with the juices, then put it back in for another 20 minutes.


Step 7: Remove chicken from the pan, wrap with foil and let it rest for 10 minutes.  Meanwhile, check the veggies- if they aren't fully cooked, put them under the broiler for a few minutes to finish them.
Note: larger chickens will need to cook longer. Use a meat thermometer to measure how done it is as it cooks. 

That's about it- it's a tasty meal, perfect for those cloudy, rainy days. Enjoy!
